3 L of water
2 cups - Brown Lentils
1 Chopped onion
2 cups - Chopped celery
1 cup - Italian flat leaf parsley
2 large Cubed white potatoes
2 cups chopped carrots
2 tbs - Dried chives
3-4 tbsp - Italian Tuscan Olive Oil
5-6 crushed Garlic
4 Cooked Italian spiced sausages
2-3 Dried Bay Leaves
3 cups - Chicken bone broth
2-3 Chicken boulion cubes
In a skillet, place 3-4 Italian spiced sausages to cook. Turkey or chicken sausages can also be used. Once cooked, place the sausages in a plate and cut into 2cm pieces. Keep to the side.
In a strainer, place 2 cups of dried brown lentils and rinse them well. Pour the washed lentils into a deep pot and fill the pot with approximately 3 L of water. Place the chopped sausages into the pot of water. Take 4-5 cloves of garlic, peel and using a large wooden spoon press down so the garlic is crushed. Place the crushed garlic into the pot. Chop 1 onion and place into the pot. Chop 3 stems of celery and place into the pot. Add baby carrots whole or chopped depending on your preference. Add 2-3 dried bay leaves into the pot. Add 2 cups of bone broth (chicken bone broth). Add 2 tsp of salt and 1/4tsp of fine black pepper. Add Italian 3-4 tbsp of olive oil (Tuscan olive oil is a good choice). Add chopped white potatoes. Add 1 cup of finely chopped Italian flat leaf parsley. Add your choice of chicken boulion 2 cubes. Add 1 cup of half sliced sweet cherry tomatoes. Add 2 tbsp of dried chives. Bring pot to a boil then let sit on medium-to-low for about 30 mins. Continue to check on the lentils and you want to get them soft where the skin is almost falling off. Then let simmer. Add more salt and pepper to taste.
